Apple Stuffed French Toast
You can bake this dish right away, but it is best when you can prepare it the
day before, and leave it covered in the fridge overnight, and bake it the next
day.

- Set rack in lower third of oven and preheat oven to 350f.
- Grease a 13 x 9 inch baking pan.
- Place apples in a sauce pan, cover with water. Bring to a boil. Allow to
cook for 2-3 minutes. Drain. Toss with Sugar and Cinnamon. Set aside.
- In a sauce pan, melt butter with brown sugar and 1 tablespoon water.
Add nuts Simmer for 10 minutes.
- Pour butter mixture into baking pan. Let cool
- Cover butter mixture with one layer of bread.
- Spoon apple mixture evenly over the bread.
- In large mixing bowl, beat eggs, milk, and vanilla together.
- Dip remaining bread slices in egg mixture then place in one layer over the
apple mixture.
- Pour remaining egg mixture over the bread, this should almost fill the
baking pan.
- Bake for 40 - 50 minutes, until golden and puffed. Let cool 10 minutes,
then turn out onto a cookie sheet.
- Slice serve and enjoy.
